CARE INSTRUCTIONS
LIGHT: Marjoram thrives in bright light to full sun. Outdoors, give it 6+ hours of sun. Indoors, place it in a bright south- or west-facing window or supplement with a grow light.
WATER: Water when the top inch of soil is dry. Marjoram prefers slightly dry conditions over soggy soil. Yellowing or limp leaves often mean it’s staying too wet.
SOIL & POT: Use a well-draining potting mix and always choose a pot with drainage. Slightly snug roots encourage stronger flavor and compact growth.
SEASONAL TIPS: Bring indoors before frost; pinch lightly in spring to keep growth full; and slow winter growth is normal.
HOW TO HARVEST
Begin harvesting once the plant is 6–8 inches tall
Snip stems just above a leaf node
Harvest regularly, removing no more than ⅓ of the plant at a time
Flavor is strongest just before flowering
Frequent light harvesting keeps the plant compact and intensifies aroma.
HOW TO USE
Za’atar marjoram has a bold, savory, slightly peppery flavor with earthy undertones—stronger than sweet marjoram and essential to Middle Eastern cooking.
Fresh
• Finely chop into salads or grain dishes
• Add to roasted vegetables or meats
• Sprinkle over flatbreads or labneh
Dried (Traditional Use)
• Air-dry stems, then strip leaves. Keep leaves whole and chop before use to retain flavor.
• Combine with sesame seeds, sumac, and salt to make za’atar spice blend
• Store leaves whole and crush just before use
Frozen
• Chop leaves (no stems) and freeze in oil for sauces and stews
• Best for cooked dishes rather than finishing
Tips
• Use the leaves only for cooking; stems are best for oil or vinegar infusions.
• Store dried leaves whole and crumble just before use to preserve flavor.
• For best flavor, harvest before flowering. If buds appear, pinch them back to refocus energy on leaf growth.
HOW THIS PLANT GROWS
Marjoram forms a soft, mounded shape with fine stems and velvety leaves. Regular light pruning encourages fullness and prevents legginess.
GROW JOYFULLY
Harvesting helps this plant thrive. Lean soil and bright light bring out its best flavor. A little restraint goes a long way.
